The ABC’s of fermentation

Of course, you don’t have to have a degree in brewing to be a successful master of the craft. But some additional knowledge on the science behind fermentation can go a long way toward helping you refine your craft.  It would be wise to take advantage of some of the extensive coursework offered at Nash Community College.

Nash Community College offers a special brewing, distilling and fermentation program. The classes are much more than mere lectures—they include practical applications in the lab. In addition, they deal with many facets of brewing that go beyond creating a tasty product.

These issues include:

  • Production and operations
  • Safety
  • Sanitation
  • Process technology
  • Agriculture
  • Marketing
  • Maintenance
  • Beverage microbiology
  • Packaging

Brewery incubator facts

While you’ll have to check with the Brewmill staff for the details on who qualifies for the program, in general, participants must have a sound business start-up plan. While the focus is on new, start-up companies, it’s also available for experienced brewers who want a second location in order to increase production.

The site offers everything you’d need to get your brew up and running, even including access to an associate’s degree or booster classes through an in-house school to help refresh your skills or teach you new ones.

Some other information about the incubator:

  • It offers a short-term lease of 3 years.
  • Each incubator warehouse space is 650 square feet.
  • It comes with unitanks capable of producing 31,000 gallons.
  • Participants will have shared canning and kegging areas.
  • Each incubator also has shared dry/cold storage.

Mind the details

There are also quite a few legal steps involved in getting things off the ground. We’re not attorneys, but this article in Growler Magazine by Gregory B. Perleberg and Jeffrey C. O’Brien, of Lommen Abdo Law Firm provides useful items that you should consider:

  • Decide what type of entity you want to form.
    • This can protect your assets from liability.  Ask about the advantages and disadvantage of an LLC or corporation.
  • Get your name (and brew concoctions) trademarked.
  • If you have employees, be sure to have human resource policies in place that you might need.

As always, we suggest you speak with an attorney before taking any steps that have legal implications—so don’t consider our information here legal advice!
